Bakery master of passion

I have been active as Night Production Manager at Kleiner Bäckerei-Konditorei since 1 December 2012. Before this I worked at a large bakery-confectionery as a substitute operating manager and I was available 24 hours a day. I needed a change after a while. I am happy that I found an appropriate position at Kleiner.

The work at Kleiner is totally different to what I was used to. Because the bakery is somewhat smaller, the work is much more manual and expert knowledge still counts here. I also have a much closer contact to the staff. I can identify myself with the Kleiner philosophy. We work with raw local and fair-trade products as far as it is possible. We give importance to high quality products and we try to do everything for our customers. It is fun to work with this principle.

My shift begins between 14.00 and 16.00 p.m. It is strictly planned. First of all I inform myself the happenings during the day shift. Afterwards I heat the ovens and prepare the bakery goods. The workers arrive between 17.00 and 20.00 p.m. for the night shift. First of all, the salads are prepared. From19.00 p.m. we bake the first rolls for the sandwiches. The special orders and fresh bread are prepared until 1.00 a.m. During this time I help in the production, supervise and control the working processes. From 03.30 the first transport loads drive off to our branches and the ZFV companies. There are always nights at Kleiner when the production runs differently, such as this year’s Grittibänz day. We had to deliver 11’000 Grittibänze in one day. This enormous amount required a precise organization and particular commitment of each worker. I was proud of myself and of my team for the successful fulfillment of every task. All the customers were satisfied.

My days are very diverse and exciting. This is the reason why I wanted to train to be a baker 33 years ago. It has been my passion to this very day. I enjoy working at night. That way I can do other things during the day, which ‘normal workers’ can only do at the weekend. I will continue to work at night so long as I can sleep well during the day. In the meantime I have organized my private life to coincide with this.
